The Japanese Principle of ‘Mottainai’ is an expression meaning “don’t be wasteful”, conveying a feeling of awe and appreciation for the gifts of nature which resonates deeply with Roushana. She is passionately committed to educating her community about South Africa’s local edible plant culture. Connecting to nature is what continually feeds her curiosity; she is inspired by the natural world around her.

The pursuit of perfection requires patience and dedication; Roushana has been working with the exciting and diverse wild flavours found in the mountains, veld, and gardens for the last 14 years.
